Everything in Tan ‘Tommy’ Pham’s new cocktail bar has a story behind it; from the vintage television on the wall and the ceiling sculpture he made himself, to the exposed brick and of course the original, signature cocktails.
“2016 is the year of the cocktail bar”, Tommy told AnyArena. As general manager and head barman of his own establishment, ‘hidden’ down a cool little alley off Pasteur, he’s literally built it from the ground up - involved in every step of a project he calls ‘his baby’. Having done it before with Park Hyatt Saigon’s Martini Bar, before spending two years with the group in Abu Dhabi, he has some outstanding pedigree.
‘Everything in the past has brought us to where we are today’, he told us, ‘and we should remember that.’ It’s an appreciation for what’s gone before that is reflected in ‘The Alley’, and explains his enthusiasm to share his Mekong Delta upbringing in the in the best way he knows how, through his unique, signature drinks.
Demonstrating both namesake cocktail ‘The Alley’ and the ‘Mekong Delta’ for AnyArena, each comes with some history. ‘The Alley’ is a vodka, lime and bitters infusion using fruit that he says is native to his hometown of Ben Tre - something he calls ‘omoi’. Tommy says he saw it being sold on the street here in Saigon, and on recognising it, knew he had to give it a home. The ‘Mekong Delta’ takes advantage of a level of presentation typical of the region too, housing a bourbon whiskey-banana infusion, blended with lime juice, egg white and ginger bitters.
Also offering a growing a la carte menu, an extensive list of single malts and a selection of cigars, ‘The Alley Bar’ is not short on ambition, or choice. ‘The time is right to make it happen’, Tommy told us.
Taking three months to find the right location, Tommy is confident his mix of great drinks, live tunes and the speakeasy-ish, vintage vibes, will hit all the right notes with a Saigon public thirsty for a better cocktail experience.

The Alley Cocktail Bar & Kitchen is at 63/1 Pasteur Street, Ben Nghe Ward, D1. Happy hour is from 5pm-8pm with a 50% discount on drink and food.
