‘Meat’ The City’s Newest High-end Steakhouse
The perfect steak should be simple. But the cut, the quality of meat, and the cooking process are essential to elevate a bit of beef into a gratifying gastronomic success. That’s why the Pullman’s edgily elegant Mad Cow Wine & Grill brought on-board their own Australian butcher, Danny Grimshaw. It also explains why they do their BBQing on a very special handmade charcoal grill.
It’s been said becoming a vegetarian is a huge missed steak. And while we’re ethically aligned to the low-meat lifestyle we agree that nothing satisfies like a slab of perfectly cooked beef washed down with a robust red wine (and here ten of the 50 kinds of wine are served by the glass). But top drawer steakhouses are still ‘rare’ here. So the just-opened Mad Cow (you can call them Maddy’s for short) is an intriguing addition to Saigon’s high-end eatery scene.
On their grill, this crazy crew cook up choice cuts — like Black Angus Beef Rib. But this wine bar and restaurant’s dishes go beyond just paddock-to-plate charcoal-BBQed bovine. There’s Lamb Gnocchi and Whole Seabass too.
If you are here for the beef, though, opt for the Grass Fed Angus Beef Tartar theatrically served tableside. Or alternatively, your more conservative guests might prefer to bite into the Signature Mad Beef Burger.
And while basking in that satisfied dinner’s-done glow, look out at a city that’s changing quickly, in part, because of next-level places like this, from the award-winning Pullman Hotel’s 30th floor vantage point. Then maybe finish up with a Maddy’s Apple and almond tart or their DIY Coconut sundae.
